2. Why Aluminum Phins Extract Better Than Stainless Steel
While stainless steel phins look shiny, coffee artisans overwhelmingly favor traditional aluminum phins. Aluminum provides superior thermal conductivity and heat retention, sustaining a steady 90°C to 94°C brew temperature throughout extraction.
Choose phins with uniformly punched micro-holes and a snugly fitted gravity damper to prevent grounds from floating up during pouring.
3. The Essential Blooming Stage for Full Extraction
The most common rookie mistake is flooding the phin with boiling water all at once. This thermal shock channels the grounds unevenly, causing water to rush through too quickly and resulting in a watery, astringent cup.
The master technique: Pour 20ml hot water (93°C) into the bottom tray for bottom-up capillary wetting, plus 25ml on top for a 120-second bloom. Once trapped CO2 is released, pour the rest for silky extraction.
